ChinaPreparation guidelines: Allow 1 teaspoon of tea for each 2 dl of water and one more for the teapot. Bring the water to the boil and then let it cool down to 80°C. Pour and leave it to infuse for 3 minutes. Sieve and serve. Suitable for 3 infusions.
This comes from Jun Mountain in Dongting Lake, Hunan province. Its leaves are as thin as needles, from which the name stems. The silvery downy leaves give a pale yellow liquor of sweetish taste with a hint of watermelon and a gently smoky finish.
