46 ORGANIC MOUNTAIN HERBS OXALIS makes every endeavour to source herbs locally from pristine environments, where rules governing ecological farming are observed. This is why we have recently begun to cooperate with a project that meets our strict criteria in neighbouring Slovakia called “Biotratry”; “bio” translates as “organic”, while the “tatry” part refers to mountains known as the High Tatras. Situated north of the village of Východná, at the foot of the Kriváň mountain, the high altitudes and associated climate of the area, quality of the soil, clean air and sufficient rainfall provide favourable conditions for producing herbs and soft fruit sustainably. This in turn allows us to produce high quality products from them that are also certified as organic. These superior herbs - sourced as they are from a mountainous locality without a trace of conventional farming techniques – go into unique recipes devised in-house with an aroma, colour and taste of their own.
