14 PURE GREEN TEAS INDIA, NEPAL Most Indian plantations were set up under the rule of the British Empire, and were predominantly devoted to the production of black teas. Since approximately 1985, experienced tea planters in both the traditional growing regions of Assam and Darjeeling have been producing highly prized fine green tea made to the Japanese steaming method. It is located at an altitude of 1850 meters amidst picturesque tea gardens. The collection is done here in a unique way – collecting only the bud and one leaf below it. The elongated, slightly twisted leaves in khaki color create a yellow-green infusion. You can find umami in the aroma and taste, which is then accompanied by sweet lemon. The area was originally settled by Scottish settlers, and it closely reminded them of their native highlands. The factory mainly produces green tea. It is crucial to avoid bruising or otherwise harming the tea leaves, else the oxidisation process would commence, which is fundamental, for example, for black teas. Leaves are briefly heated or steamed, then rolled and finally dried. A good quality green tea can be identified by a fresh scent that is reminiscent of hay. Its leaves are green, not brown, and are slightly glossy, dry and firm. Green teas, since they are not oxidised, contain many important antioxidants – polyphenols, which destroy loose radicals in the human body. Loose radicals are particles that cause cells to age and encourage various diseases.
